No Bake Cherry Cheesecake (light)

Introduction

These are the ingredients I had on hand. I've seen it made with fat free cream cheese (which I am not a fan of), lowfat graham crackers and with 1% milk. Ours turned out soooo yummy! Number of Servings: 15

Ingredients

    Graham Crackers (7 large squares)
    8 oz. Neufchatel Cream Cheese
    1 cup cold milk (2 % or skim)
    2 Tblsp. lemon juice
    1 small box instant sugar free vanilla pudding
    8 oz. (227 gm.) Cool Whip, Light
    1 can (20 oz.) light Cherry Pie filling

Directions

Line the bottom of a 9 x 13 pan with your graham crackers. Beat the cream cheese, lemon juice and milk until smooth. Add the pudding mix and then fold in the light Cool Whip. Spread this mixture over the graham crackers and then spread the pie filling on top of this. Chill at least one hour and then enjoy!

Serving Size: Evenly divide into 15 pieces
