Cinnamon Applesauce Cake

Introduction

This cake is not incredibly sweet, but it nips my cinnamon cravings in the bud! The applesauce keeps it extremely moist and spongy. It also knocks out the fat and calories by subbing it for oil. Number of Servings: 10

Ingredients

    light cooking spray
    1 cups flour
    cup packed light brown sugar
    teaspoon baking powder
    1 teaspoon baking soda
    2-3 tablespoons ground cinnamon
    1 teaspoon salt
    cup fat-free sour cream
    1 cup unsweetened applesauce
    1 teaspoon almond extract
    cup water

    Optional (not included in nutrition)
    -Raisins (or other dried fruit)
    -Nuts

Directions

1.Preheat oven to 350F.

2.Coat a square or circle baking pan with light cooking spray.

3.Mix the flour, brown sugar, baking soda, baking powder, cinnamon, and salt in a large bowl.

4.Mix the sour cream, applesauce, almond extract, and water in a small bowl.

5.Add sour cream mixture to flour mixture. Mix well but do not beat.

6.Pour batter into cake pan and bake until done, about 35-40 minutes.
