Mom's Tea Biscuits

Submitted by: CURVES_N_CURLS

Introduction

Decided to experiment a little... Mom's original recipe called for all white flour, and shortening. Replaced half the white flour with whole wheat, and put butter in place of the shortening (shortening has trans fats, boo-hiss! LOL!). Decided to experiment a little... Ingredients

    ~ SIFT TOGETHER:
    * 1 cup All-purpose (white) Flour
    * 1 cup Whole Wheat Flour
    * 4 tsp. Baking Powder
    * 1 tsp. Salt

    ~ WITH A PASTRY BLENDER OR TWO KNIVES CUT IN FINELY:
    * 1/2 cup Butter

    ~ ADD:
    * 1 cup Milk, 1%

Directions

1. Stir with a fork to make a soft dough.
2. Turn dough onto a lightly floured surface and knead gently 8 to 10 times.
3. Roll or pat to desired thickness (biscuits will double in height when baked).
4. Cut with a floured round cookie cutter, or top of a small juice glass.
5. Place biscuits on an ungreased baking sheet, close together for sift-sided biscuits or aout 1 inch apart for crusty-sided biscuits.
6. Bake in preheated 425F oven for 12 to 13 minutes, or until done.
7. Makes a 'baker's dozen', or 13 biscuits. :) Enjoy!

  • I loved these. I even put about l and a half cups of whole wheat flour and they turned out beautifully. They were great with my homemade soup. - 12/29/07
