Raisin Bran Cookies

Number of Servings: 48

Ingredients

    1 cup butter (softened)

    1 cup sugar

    2 large eggs

    1 1/2 tsp. vanilla

    1 1/2 cups flour

    1 tsp. baking soda

    1 tsp. salt

    1/2 tsp cinnamon

    3 cups Bran cereal

    1 cup raisins

Directions

1. Pre-heat oven to 350' F. In a large bowl, cream butter and sugar. Add in eggs and vanilla. Beat well.

2. Set aside first mixture. In a medium-sized bowl, mix together the flour, baking soda, salt, and cinnamon. Slowly beat or stir this mixture into the large bowl containing the wet ingredients.

3. Using a spoon, fork, or your fingers, crush up the bran cereal in a small bowl.

4. Mix the bran cereal in with everything else. Lastly, stir in the raisins.

5. Drop onto the cookie sheet using a tablespoon measurer. Bake for about 12-15 minutes or until golden brown.

Serving Size: Makes 48 cookies

*NOTE*: Make sure to stir the cereal into the other ingredients SEPERATE FROM the dry ingredients. DON'T mix the cereal into the dry ingredients then combine the two mixtures. The flour, baking soda, etc. gets stuck in the little pieces of cereal and ends up not getting ALL mixed in.

    Great recipe because you can make smaller ones and I used my small pamped chef ice cream scoop to make them. A large recipe, but I freeze some. - 6/25/13
