I make this at least once a week because there are so many variations for it. Meat, veggie, what ever you want. Number of Servings: 1

Ingredients

    3/4 -cup of Egg Substitutes or Egg whites

    1/2 -Serving of Turkey Pepperoni

    2 -tbsp of Scallions chopped

    1- large Button mushroom

    1/4 -cup (I use a little less) of any jar pasta sauce you like

    1/4 - 2% Shredded Cheese

Directions

Sautee the veggies with cooking spray and when they are done, remove from pan and place to the side. *I like to heat the pepperoni just a bit, so sautee your slices in the pan that you just removed your veggies from (no heat) just to warm them up*

You can wipe out that same pan with a paper towel, heat it up and coat it again it with cooking spray. Once hot, add your egg products, and a dash of pepper. Once the sides start to set, flip your omelette.

You can now add the sauce on one side of the omelette, veggies, pepperoni and cheese. Then fold the other half of the omelette over this side. Let cook for just a few more seconds and slide out of pan, onto plate.

Serving Size: Makes one nice size omelette
