Easy Lettuce Free Salad

Introduction

This is a fresh salad for those of us that aren't big fans of lettuce. The cottage cheese acts as a dressing with protien as well. This is a fresh salad for those of us that aren't big fans of lettuce. The cottage cheese acts as a dressing with protien as well.
Number of Servings: 4

Ingredients

    Two Large Cucumbers, One Large tomato, One Jar Pickled Beets (about 2 cups) Cottage Cheese (1 1/2 cups)

Directions

Slice the cucumbers, then cut each slice into quarters to make it bite size pieces. Dice the tomato. Slice Beets to make them bite size pieces. Combine the cucumbers, tomatoes, beets and 1 1/2 cups of cottage and SERVE!!
