Roasted Squash and Winter Melon

Ingredients

4 T Olive oil
1 T Thyme
3/4 tsp salt
1/2 tsp pepper
3 cups butternut squash, cubed
2 cups sliced mushrooms
2 cups winter melon, cubed
Directions
Preheat oven to 375F. Stir together oil, thyme, salt, and pepper. Mix squash, mushrooms and winter melon in a large bowl. Toss vegetables with oil mixture and pour into a large baking pan, in a single layer. Roast, stirring occasionally until vegetables are tender, about 25-30 minutes.
