Pollo Ala griglio

Ingredients

    Chicken Breast, no skin, 16 ounces (remove)
    Olive Oil, 1 tbsp (remove)
    Garlic, 1 clove
    Herb ox Sodium Free Instant Broth and Seasoning, 1 serving
    *Lemon Juice, 1 fl oz
    Pepper, black, .25 tbsp
    Butter, unsalted, 2 tbsp
    Poultry seasoning, .5 tbsp
    *Potato, raw, 4 medium (2-1/4" to 3-1/4" dia.)
    Olive Oil, 1 tbsp
    Vegetables, Mixed Salad Greens, 4 servings
    Grape Tomatoes, 2 cup tomatoes

Directions

Preheat oven to 400. Quarter potatoes, place in small roasting pan and drizzle with olive oil or spray with cooking spray. Roast in 400 oven for 30 minutes.
Heat broth over medium heat.
Rub chicken breasts with garlic and sprinkle with seasonings. Spray chicken with cooking spray and place on hot grill. Cook 4 minutes on each side until browned. Place chicken on plate and keep warm.
Heat 1 TBS olive oil in large non stick skillet over medium heat. Add warm chicken broth, lemon juice, ground pepper, and butter. Place grilled chicken and roasted potatoes in sauce, and heat 3 - 4 minutes turning to coat.
Place on top of baby greens and grape tomatoes.
