Tex Mex Gumbo

Introduction

Easy to make and quick to serve. Rice or other grains separate. Put the rice in the bowls and add the gumbo on top. Also great with cornbread instead of grains. Or alone as just a soup. Ingredients

    Olive Oil Cooking Spray (0.4 sec spray), 1 serving
    Celery, raw, 2 cup, diced
    Onions, raw, 2 cup, chopped
    Okra, frozen, 2 package
    Canned Tomatoes, 16 oz can
    Chicken Bouillon, 1 tsp
    Jalapeno, chopped, 1 each or to taste
    Thyme, ground, 0.5 tsp
    Basil, 1 tbsp
    Garlic, 1 tsp
    Chicken Breast, no skin, 16 ounces
    Turkey Smoked Sausage, 7 serving
    1/2 c TVP (textured vegetable protein)
    Water, tap, 2 cup or more to get thickness desired

Directions

makes twelve 1-cup servings

Heat a deep pot on medium heat. Spray it with cooking spray. Add celery and onions and stir until onions are translucent. Add frozen okra and stir until okra is thawed. Add canned tomatoes, tomato sauce, chicken bouillon, 2 cups water, spices, jalapenos and stir. Cut up chicken and sausage and stir into pot. Add remaining water. Simmer until everything is cooked and flavors have melded. Add salt and pepper to taste.

Or you can just dump everything in the pot and cook it with occasional stirring until everything is done. :-)
