Robin's Creamy Beet Salad

Introduction

Sweet and tangy...good cold or warm Sweet and tangy...good cold or warm
Number of Servings: 3

Ingredients

    3-4 whole beets
    1/2 c fat free plain yogurt
    1 tbsp dijon mustard
    1 tbsp yellow mustard
    1 tsp horseradish
    1 tsp dill weed

Directions

Heat oven to 400 degrees. Twist tops off beets and wash. Wrap beets in foil and throw on oven rack for 45 minutes. Dressing is just a mix of all the ingredients. Wait for beets to cool before cutting in chunks and adding to dressing. The dish will look pink once stirred

  • My beets took an hour longer to roast but other than that this recipe is perfect. I tasted it while it was still warm, but think it will be just as good cold. I used non-fat Greek yogurt and I think the dressing would also work for potato salad. - 6/30/11
