Introduction

this is a very quick and simple recipe. i make it in under 10 minutes, and i substitute in any vegetables or cheese i have. this is a very quick and simple recipe. i make it in under 10 minutes, and i substitute in any vegetables or cheese i have.

Ingredients

    1 medium potato, with skin
    1 cup broccoli
    1/2 medium onion
    1 clove garlic
    8 mushrooms
    2 tsp margarine
    1 oz swiss cheese
    1/4 cup diced ham

Directions

1) scrub potato and cook in microwave, turning every couple minutes until done.
2) meanwhile, in a frying pan melt 2 tsp margarine (or oil) on medium. when warm, add onions, mushrooms, broccoli, garlic and diced ham. stir often and cook until desired tenderness.
3) cut potato in half, and sprinkle on half the cheese. then pour on all the stir-fried vegetables. finally, sprinkle the rest of the cheese and cook in the microwave 30 more seconds to melt cheese. season with pepper.


Serving Size: makes one filling meal
