Spaghetti pie

Introduction

Use up leftover spaghetti sauce and noodles in a spaghetti pie! I use homemade sauce made with Yves veggie ground round and a mix of veggies like zucchini, red peppers, mushrooms. Ingredients

    3 cups cooked spaghetti noodles, drained
    2 eggs, beaten
    1 Tbsp parmesan
    s&p
    1 cup cottage cheese (2%)
    1/2 cup frozen chopped spinach, thawed
    1/4 tsp nutmeg
    2 cups leftover spaghetti sauce made with Yves ground round, veggies
    1/4 cup Kraft mixed cheese


Directions

Preheat oven to 350F.
1. While noodles are warm, stir in eggs and parmesan with a dash of salt and pepper. In a greased/sprayed pie plate, make a "crust" of the noodles.
2. Mix cottage cheese with spinach and nutmeg. Spread across noodles.
3. Top cottage cheese with spaghetti sauce then sprinkle all over with 1/4 cup mixed cheese.
4. Bake for about 25 or 30 minutes, covered then uncover and bake another 5 minutes to brown top. Alternatively, do not sprinkle with cheese, bake uncovered for 20 minutes, add cheese, then bake again 5 or more minutes.
