Mock Mashed Potatoes

Introduction

I found this on the Food Network from chef George Stella. It was fantastic and so low in carbs and fat, even when you use real cream cheese and Parmesan. He recommends adding 3 Tbsp butter, but I doubled the recipe and only added one and it was still delicious. You can garnish with fresh rosemary or chives too! Ingredients

    1 med head of Cauliflower- cut into small pieces
    1/4 cup Grated Parmesan Cheese
    1 Tbsp Cream Cheese- softened
    2 large cloves of garlic- minced
    1/2 tsp. of fresh cracked pepper
    1/8 tsp of Chicken Bouillon or stock
    Fresh Rosemary or chives for garnish

Directions

Fill a large stock pot with water and boil. Add Cauliflower pieces and boil for 6 minutes or until soft. Drain cauliflower but do not cool. Place cauliflower between paper towels to dry COMPLETELY! (they'll be runny otherwise) Put hot cauliflower in food processor with Cream Cheese, Parmesan, garlic, bouillon, and pepper. Blend until smooth. Garnish with Chives or Rosemary and Enjoy!!

Serving Size: Makes four 1 cup servings
