Roasted Potatoes

Number of Servings: 6

Ingredients

    8-12 baby red potatoes
    3 tbsp. olive oil
    1 tbsp chopped chives
    .5 tbsp chopped parsley
    1 tbsp chopped rosemary
    3 tbsp parmesan cheese

Directions

Preheat oven to 450*.

Slice potatoes into quarters and place in a gallon size ziploc bag. Add olive oil and all herbs.

Coat potatoes with oil mixture and place on a sheet pan. I line the pan with parchment paper. Roast for 20 minutes, remove from pan and sprinkle cheese on potatoes. Place potatoes back in the oven for 10-15 minutes until tender.

Sprinkle extra herbs and cheese before serving. *Optional.

Serving Size: makes 4-6 1/2 cup servings
