Baked Oatmeal

Introduction

Use any fruit available to you, esp. fruit on the verge of going bad. No waste. This is delicious! Use any fruit available to you, esp. fruit on the verge of going bad. No waste. This is delicious!
Number of Servings: 4

Ingredients

    2 cups oatmeal (not quick cooking)
    1 tsp baking powder
    1 tsp salt
    1 1/2 fat free milk
    1 mashed banan
    1 egg
    1 tsp vanilla
    1 tblsp brown sugar

Directions

Grease an 8x8 pan well so food doesn't stick. Combine dry ingredients in one bowl. Combine wet ingredients with mashed banana in another bowl. After mixing wet, add dry ingredients. Stir well. Slice one banana (or any fruit) and line the bottom of pan. Pour ingredients over. Slice another banana and place on top of ingredients.
Bake at 375 for approx. 26 minutes.
When done, change oven to broil. Sprinkle 1 tblsp of brown sugar over top and broil for 3-4 mins till brownish color and bubbly.
Cool a few minutes. Slice into four pieces and use spatula to loosen edges and lift out. Delicious if you like oatmeal and just sweet enough!
