4 Large Peaches
7/8C White Flour
75g Brown Sugar
1/4C Ground Almonds
In a bowl, combine flour, 100 grams of diced butter and 6 tablespoons of water. Form into a ball and place in the refrigerator.
Peel the peaches, split into two, remove the seed and cut into large pieces.
Melt 25 grams of butter. Add the brown sugar and stir until carmelized. Add the peaches. Allow to cook three minutes. Place in the bottom of a pie pan and cover with ground almonds.
Roll the dough into a circle slightly larger than the pie pan. Cover the peaches with the dough and bake about 30 minutes.
Unmold the tarte by inverting onto a plate. Serve warm or cold.
