Italian Chicken & Beans (South Beach Phase 1)

Introduction

Awesome way to get some carbs into your day in Phase 1. Awesome way to get some carbs into your day in Phase 1.
Number of Servings: 1

Ingredients

    1 Tbsp olive oil
    4 chicken breasts, skinless
    2 cloves of minced garlic
    1 tsp. oregano
    1 tsp. basil
    2 cans Hunt's fire roasted tomatoes with garlic
    2 cans cannellini beans (white kidney beans), drained and rinsed


Directions

Heat olive oil in pan, add chicken breasts, and sprinkle with minced garlic, oregano and basil. Brown until juices run clear. Add two cans of fire roasted tomatoes with garlic and two cans of cannellini beans (white kidney beans). Cover and simmer for 20-30 minutes.

I served this with zucchini sauteed in olive oil and sprinkled with mozzarella cheese.

Serving Size: makes 4 servings (1 whole chicken breast each)
