If you want to make these vegan, just substitute the cheese and egg white for vegan alternatives. You can use any nut you please and they can be ground if you do not like pieces of nut in the sausages.Serve with a Carrot and Sweet Potato Mash and Sauteed Leeks, they go together perfectly. Ingredients

17 1/2 oz (500 grams) Parsnips, peeled and cut into chunks
2 1/5 oz (75 grams) Cashew Nuts, chopped
3 1/2 oz (100 grams) Cheddar or Colby Cheese, Low Fat, grated
2 Sun Dried Tomatoes, chopped
4 tblspn fresh Parsley chopped, or 3 tsp dried
3 1/4 oz (90 grams) Bread, crumbed
2 Egg white
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
Directions
Cook parsnips in boiling water and cook until just soft. Drain and mash, leave to go cool.
When cool mix in all other ingredients. Season only if necessary and form into 8 sausage shapes.
Spray skillet with Canola spray and cook sausages until brown all over.
Serve with sweet potato/carrot mash and sauteed leeks.
