Mini Pork and Potato Loaves

Ingredients

*Russet Potato 1 medium
*butter, Country Crock, 2 tbsp
Onions, raw, 1 medium chopped
Garlic, 1 cloves
Ground Pork,1 cup
Salt, 1 tsp
Pepper, black, 1/2 tbsp
Egg substitute, 1/4 cup
Chicken Broth, 1/4 cup
Sour Cream, 1/4 cup
Mushrooms,4 oz
Directions
Mash cooked potato and set aside.
Heat butter in skillet and saute onion and mushroom with salt and pepper until tender, about 5 minutes.
In bowl place about 1/4 of onion, mushroom mixture and using paring knife and fork chop into small pieces.
Add pork and potato to bowl and mix well and form into 2 balls. Preheat Xpress with divider pan and spray with nonstick cooking spray.
Place pork mixture in wells, using fork to distribute mixture evenly. Close cover. Cook 12 minutes.
Heat pan with remaining mushrooms, add wine and sour cream, stirring to make sauce.
Serve sauce over croquettes.
for bite-sized loaves use mini-food pan.
