Number of Servings: 6


    beets (roasted 1 hr at 375 F)
    3 cloves garlic, minced
    1/4 C red onion, diced
    1 C walnuts, crushed or chopped
    juice of 1 lime
    1 tsp chile powder
    salt & pepper to taste


peel and shred beets, mix with remaining ingredients
serve chilled
Optional: add mayonnaise to taste for a creamier, more traditional salad
