Introduction

This is a blend of root and cruciferous vegetables and greens which will provide all the vitamins and minerals needed to rejuvenate you during a stressful day. Instead of reaching for a sugary snack, enjoy a cup of this healing and comforting soup!!! Number of Servings: 8

Ingredients

    1 large Onion
    1 large Celery with leaves
    4 medium Carrots
    1 Red Bell Pepper
    1 medium-large Parsnips
    2 Beets,
    4-6 Baby Yukon Gold or Red Bliss Potatoes
    3 cups Kale or Swiss Chard
    2 cups Parsley
    1/2 medium-large Cauliflower
    1/3 cup Dulse or other sea vegetable
    10 Brussels sprouts
    6-8 cloves of garlic

    Sea salt and course ground pepper to taste

    Enough Filtered Water to cover vegetables

Directions

Cut all vegetables into bite size pieces. Cover with filtered water. Bring to boil over high heat. Reduce heat and let simmer for 1 hour. Let cool and divide into single serving containers.

You can substitute your favorite vegetables but make sure you have some roots and cruciferous vegetables and greens to get a balance of vitamins, minerals and phytonutrients!

Serving Size: makes 10-12 1 cup servings
