Cocoa Oat Cookies

Ingredients

    2 Tbsp Stevia Powder
    1 cup rolled oats
    1 cup whole wheat flour
    1/2 cup whey protein isolate
    1 3/4 teaspoons baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1 Tbsp ground cinnamon
    1/2 cup zucchini puree
    1/4 banana pureed
    1 tablespoon canola oil
    2 teaspoons water
    1 egg

Directions

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, whisk together Stevia, oats, wheat flour, whey protein isolate, baking soda, baking powder, salt, and cinnamon,. Stir in zucchini, banana, canola oil, water, egg, and molasses. Stir in flax seeds, if desired. Roll into 17 large balls, and flatten on a baking sheet.
3. Bake for 5 minutes in preheated oven. DO NOT OVERBAKE: the cookies will come out really dry if overbaked.
