Introduction

So I found this recipe on the Crockpot 365 Blog and thought it would make a really good protein rich, low calorie snack. I added my own spices to it, experimented a little, and fell in love! Ingredients

    4 cups beans, perferably reconstituted by hand NOT canned (What kind of bean is up to you. I personally like black beans and chickpeas)
    2 tbsp lime (or lemon, whatever you like) juice
    .25 tsp cayenne pepper
    1 tsp No Salt added Mrs. Dash Southwest seasoning
    Dash salt

Directions

Set up a large crockpot (6-8.5 quart) to preheat a little on LOW. While waiting for crockpot to heat up, take out whatever beans you are using and pat so that they are really dry. Dump beans into crockpot with lime juice, cayenne pepper, Mrs. Dash, and salt and stir well to combine. Spread chickpeas so that they make a uniform layer. Now pop the lid on, but prop it open a bit (I use the original authors tip of using chopsticks) so condensation can be released. Cook on low for 8-10 hours (8 for small beans like black beans and 10 for large beans like garbanzo beans) until shriveled up and crunchy.
