Southwest Chicken Stew

Introduction

Ingredients

    8 oz chicken breast
    1 tsp oil
    1 onion
    3 cloves garlic
    1 green pepper
    1 can black beans (drained)
    1 cup frozen corn
    1 can tomatoes w/ green chilis
    1 tbsp cumin

Directions

Add oil to skillet.
Add cut up chicken breast and lightly brown.
Add onions, garlic and green peppers and cook till almost done.
Add in 1 can of black beans (drained), 1 cup frozen corn, and one can of tomatoes.
Add cumin to taste.
Simmer about 20-30 minutes until flavors blend.
Great served over brown rice or whole grain pilaf.

    Husband and I both loved this one. I sauted the pepper, garlic, onions, and chicken then put all the ingredients into a crock pot and cooked for 6 hours. I doubled the recipe and added extra chicken. Will definately make this one again. - 9/27/08

    I made this for lunch today and boy was it YUMMY! My 21 year old son loved it too! I omit green pepper, added jalepeno's chopped instead. I also reduced the sodium by using no salt vegetables and fresh corn & tomatoes. I used canned black beans(rinsed) I served with dollup of fat free sour cream. - 11/11/08

    We love this. I didn't saute anything, I put the onions, beans and corn into the crockpot, added garlic/onion/chili powder and some Pace Picante, then put the chik breasts on top. After it was done, I shredded the chicken and served over brown rice with cilantro (w/ bit of cheese and sour cream). - 9/24/09

    Love it! To add a little more zip use a jalapeno with green pepper, dry chili pepper, or a couple Tbs of your favorite salsa. I served with a dollup of fat free sour cream & a pinch of shredded cheese. yumm - 5/8/09

    Delicious and so easy to make. My kind of recipe! I did add 3 small jalapenos fresh out of the garden. I will be making this one again. This is also thick enough we will probably be using this in tortillas too. Served on rice for dinner and it was delicious. - 9/24/09

    this was good. fairly easy and quick too. i'll make it again, but i'll be doctering it up a little, not sure how - it seemed like it was missing something. we like spice in this house, so maybe that was it. good though - it will go into rotation for sure! - 11/16/08

    This was really delicious. I doubled the recipe and used chili powder since I didn't have cumin. It was wonderful with just the right amount of spice! Ate it over brown rice with a cheese quesadilla. Will def. make this again and again! - 9/29/09

    This is a great multi-meal recipe that tasts wonderful. I just wish it didn't have so much sodium. Using fresh rather than canned black beans might cut down the sodium. - 5/9/09

  • Originally made this almost as printed except used 2 chicken breasts (about 12oz). Very good! It's a little dry using 10oz can Rotel, so now use 28oz can. I like to top it w/ nonfat Greek yogurt (it's like sour cream) and cilantro. Lots of veggies in this so portions are generous and satisfying. - 2/3/13
