Crispy Herbed Chicken Nuggets

Introduction

A delicious and healthier version of one of my favorite weakness! The key to this delicious alternative is the fresh herbs. Really good when pared with a big salad! Ingredients

    2 Tyson Boneless, Skinless Chicken Breasts - 4 oz each
    4 Fresh Basil leaves - finely chopped
    1 Tbsp Fresh Rosemary leaves - finely chopped
    1 Tbsp Fresh Chives - finely chopped
    1 Tbsp Garlic Powder
    1/2 Tsp Seasalt - freshly ground
    1 1/2 Tbsp olive oil - divided
    1 cup Dynasty Panko bread crumbs

Directions

Prepare chicken by trimming any visible fat and cutting into bite size pieces. Place in a large Ziplock bag.

Finely chop fresh herbs and add to chicken. Add seasalt, garlic powder and half of the olive oil. Close the Ziplock bag and mix ingredients thoroughly. Place bag in the refrigerator and let marinate for at least 20 minutes.

Preheat oven to 425. With the remaining olive oil, grease the bottom of a baking pan.

Place Panko bread crumbs in a shallow bowl. Working with a few pieces at a time, coat chicken with the bread crumbs and place on baking pan.

Bake for approximately 15 minutes, turning pieces half-way to evenly brown.

(Baking time is approximate depending on your oven! , Please make sure your chicken is cooked thoroughly! )
