Harvest Eggplant/Squash Augraten

Introduction

This is a very good vegetable augraten. You can add more vegetables such as fresh carrots, zuccinni, green beans or peas for multi vegetable augraten the kids are sure to love because of it's cheese sauce.(Adding other veggis will change the ntritional values) This is a very good vegetable augraten. Ingredients

    **VEGETABLES (FRESH) - Eggplant, unpeeled, 24 oz
    frozen yellow squash, 3 cup
    *Onion, raw, 1 medium 2-1/2" diameter(110g), 110 gram(s)
    *Garlic Salt, 1.5 tsp
    *Lawry's Season Salt, 1 tsp
    *ground cinnamon, 1 tsp
    *Ground Nutmeg, 1 tsp
    *Broiled lamb patty 3 oz, 1 serving
    98% Fat Free Oscar Mayer Bologna, 3 serving
    *Sauce, Homemade Cheese Sauce, 2 serving
    *dairy maid dairy- Grab and Go 1% milk (school milk carton), 1 serving
    *Egg (Raw), 200 gram(s)
    Bread crumbs, dry, grated, seasoned, 1 cup
    Garlic, 0.05 cup
    Pepper, black, 1 tbsp

Directions

Slice eggplant and yellow squash, remove ends of vegetables. Chop onion and garlic. In a medium size bowel put the bread crums and well beaten eggs. Mix well and mix in 2 TBLS. margarine-I use Can't believe it's not butter. Now layer the eggplant, yellow squash, onion and garlic. Atop the first layer spoon half the bread crumb mixture and sprinkle with half the cinnamon and nutmeg. Layer the rest of the ingredients as you did the first ending with the breadcrumb mixture and spices. Last mix milk with cheese sauce and pour this over the vegetables. Bake in slow cooke or in oven set at 325 degrees until hot and bubbly. Enjoy!
