Ingredients

    1 leg of lamb 900g
    25g rosemary
    2 lemons
    2 tsp ground cumin
    4 tbsp olive oil


Directions

place rosemary, juiced lemons, cumin & oil into processor and blend
pour mixture over lamb and massage into the meat.
leave one side for 30 minutes.
pre heat oven 200c / gas 6
place the meat in a roasting tin centre of oven.
cook for 20mins then lower heat to 180c / gas 4
cook 20 minutes per 300g
(adjust time for fan assisted ovens)
baste meat every 20 minutes
when cooked to liking allow meat to rest 20 mins
carve and serve with mixed vege & roast potato

.

    I added a clove of fresh garlic and Greek spices to the processor then cooked with manestia (orzo) last 30 minutes with water added to pot AMAZING!! My brothers added (reduced fat) feta to the manesta; taste just like our YIayia's!! - 2/5/08

  • Made it with fresh rosemary and ground cumin. Started at 390 F and dropped to 350 until internal temp was 153. I wrapped it in foil and did not baste - 5/17/10
