Ingredients

    1 1/2 CUPS IRISH OATMEAL
    1 CUP WHOLE WHEAT PASTRY FLOUR
    1/3 CUP SUNFLOWER KERNELS
    1/4 CUP FLAX SEED MEAL
    2 TSP BAKING POWDER
    1/2 TSP SEA SALT
    1/3 CUP LIGHT BROWN SUGAR
    1 CAGE FREE LARGE BROWN EGG
    1/3 CUP SUNFLOWER OIL
    1 CUP NONFAT MILK MIXED WITH 2 TSP LEMON JUICE TO MAKE BUTTERMILK

Directions

PREHEAT OVEN TO 350 DEGREES F. LINE MUFFIN CUPS WITH WRAPPERS. IN A BOWL, COMBINE OATMEAL, FLOUR, SUNFLOWER SEEDS, FLAX MEAL, BAKING POWDER, SALT, AND SUGAR. IN ANOTHER BOWL, WHISK TOGETHER EGG, OIL, AND BUTTERMILK AND ADD TO DRY INGREDIENTS, STIRRING UNTIL BLENDED. THEN ADD BLUEBERRIES. SOME LUMPS WILL REMAIN. SPOON INTO MUFFIN CUPS, FILLING EACH CUP 3/4 FULL. AND BAKE FOR ABOUT 30 MINUTES.
