Introduction

Ingredients

    1 Cup Flour
    2 TBS Baking Powder
    1 TBSP Sugar
    1/4 tsp Salt
    1 Large Egg
    1 Cup 2% Milk
    1 Cup Mashed Sweet Potatoes

    Non-Stick Cooking Spray for the pan

Directions

Mix the flour, baking powder, salt and sugar in a medium bowl. Add the milk. Then add the egg. Beat until smooth. Add the mashed sweet potatoes. Blend until smooth.

Heat a medium skillet. Spray with the non-stick spray if needed to keep pancakes from sticking.

Serving Size: Makes 16 2-inch Pancakes
