Peanut chicken

Number of Servings: 2

Ingredients

    2 - 4oz boneless chicken breasts
    1/4 c. flour
    1 egg
    1/4 c. chuncky peanut butter
    1/4 c milk
    3/4 c. panko bread crumbs

Directions

Preheat Xpress and spray with nonstick cooking spray.
Mix egg with peanut butter; slowly add milk until blended (add a littel extra milk if mixture is to thick).
Dredge chicken in flour, dip into peanut butter batter, and coat generously with bread crumbs.
Place chicken into Xpress cooking base.
Close cover and cook 15 minutes until chicken is no longer pink.

Serving Size: 2 pieces of chicken
