Sun-dried Tomato Artichoke Chicken

Introduction

A new tasty way to make chicken!! I cannot express to you how delicious this recipe is, simple and quick as well. As an option you can serve over rice or pasta. Ingredients

    1.5 lbs boneless, skinless chicken breasts (option, cut chicken
    into bite size pieces)
    1/4 cup whole wheat flour
    2 Tbs. canola oil
    1/2 cup white wine (may substitute low sodium chicken broth)
    Juice of 1 lemon
    2 14 oz can quartered artichoke hearts, drained and rinsed
    1 jar tomato bruschetta


Directions

1. Preheat large saute pan on med-high for 2-3 minutes. Place flour in lg ziploc bag and add chicken and shake to coat. Place oil in pan then add chicken. Cook and stir for 2-3 minutes until lightly browned.
2. Stir in wine. Reduce heat to med-low and cook 2-3 minutes or until liquid is slightly reduced.
3. Sprinkle lemon juice over chicken and stir in artichokes, tomatoes and olive oil. Cook an additional 2-3 minutes. Remove pan from heat and sprinkle with cheese.

May be served alone or with pasta or rice (not included in calculations)

Serving Size: Makes 6 .75 cup servings
