Introduction

This is a recipe from my husband's grandmother's much loved and duct taped cookbook that I modified to make it a little healthier. Still a dessert, but slightly healthier. This is a recipe from my husband's grandmother's much loved and duct taped cookbook that I modified to make it a little healthier. Still a dessert, but slightly healthier.
Number of Servings: 8

Ingredients

    2 cups white flour
    2 cups whole wheat flour
    2 T baking powder
    1 T ground flax seeds
    1 pinch salt
    2 T sugar
    0.75 cup shortening
    1.25 cups skim milk
    2 eggs

Directions

Mix the first 6 ingredients together. Cut in shortening. In a spearate bowl, beat eggs and then stir in milk. Add the egg mixture to the flour mixture.

Shape into individual shortcakes. You can make 8 large cakes, or more smaller ones for a smaller portion size. Bake on a cookie sheet at 400 degrees for 15-20 minutes until lightly browned.

Allow to cool slightly, and serve with whipped cream and strawberries or other topping.
