Chocolate Protein Cake Bars (Jamie Eason Recipe)



Introduction

A recipe by Jamie Eason for chocolate protein bars, found on BodyBuilding.com, with a few changes given what I had on hand.

These are super moist (if not overbaked) and chocolatey, great for a chocolate cake fix!

Changes: I used 1/2 cup applesauce & one mashed banana, instead of 8 oz. berry baby food, as the original recipe required. I also subbed 1/2 cup wheat pastry flour with 1/2 cup oat flour, rather than full cup oat flour, and used only 2 servings egg beaters egg whites, rather than 4 whites from eggs.

Ingredients

    1/2 cup Oat Flour (I processed regular rolled oats to flour)
    1/2 cup Whole Wheat Pastry Flour
    2 Egg-beater Egg Whites (or 4 whites from eggs)
    2 scoops Vanilla Whey Protein Powder (I used Beverly UMP brand, at 130 cals & 20 g protein per scoop)
    ½ cup Splenda, Truvia, or Ideal
    ½ tsp Baking Soda
    ¼ tsp Salt
    1/2 cup Unsweetened Applesauce
    1 medium mashed banana
    4 tbsp Baking Cocoa
    4oz Water

Directions

1. Preheat oven to 350 degrees.
2. Mix dry ingredients (oat flower, vanilla whey protein, baking soda, salt, baking cocoa) together in a large bowl.
3. Whisk together wet ingredients (egg whites, Splenda, Truvia, or Ideal, Applesauce, Banana, Water) together in a medium sized bowl.
4. Add wet ingredients to dry ingredients and mix together.
5. Spray cooking dish with a non stick butter spray (or line with parchment) and add batter to dish.
6. Bake 20-30 minutes in oven. (I baked for about 24 minutes- perfect!)

Serving Size: Makes 16 bars. Serving = 2 bars.
