Banana Pudding

Ingredients

    sugar - 1 Cup
    Milk - 2 Cups
    Vanilla extract - 2 tsp
    Cornstarch - 2 1/2 tsp
    Milk - 3/4 Cup
    2 eggs, seperated
    2 egg whites
    sugar - 2/3 cup
    3 Bananas, sliced
    Vanilla wafers - 4oz

Directions

Combine 1st 3 ingredients and bring to a boil
Combine milk and egg yolks
Warm with a small amount of hot mixture then combine.
Cook stirring untill mixture thickens.
cook 1 minute

Beat 4 egg whites until soft peaks form
Fold 1/2 into custard, reserve remainig for meringue

Layer custard, wafers, and Bananas in oven-proof dish
Cover with Meringue sealing edges

Bake 5 minutes in a 450 degree oven until light brown

Refrigerate. scoop into dessert cups.
