Chicken Broccoli Casserole

Introduction

Number of Servings: 6

Ingredients

    Broccoli, fresh, 3 cup, chopped
    Chicken Breast, no skin, 2 cups
    Mushrooms, fresh, 1 1/2 cup, pieces or slices
    Cream of Mushroom Soup, .1 can (10.75 oz)
    Milk, 1%, 3/4 cup
    Nutmeg, ground, 1 tsp
    Curry powder, 1 tbsp
    Fresh garlic, 2 clove, minced
    Bread crumbs, dry, grated, seasoned, 1 cup

Directions

Steam broccoli in a microwave steamer 4 - 6 minute depending on your microwave wattage. Place in cold water, drain set aside in a large mixing bowl.

Chopped chicken breast into bite-size pieces, brown in skillet, set aside. Saute mushrooms till browned.

Mix cream of mushroom soup with the milk
Add curry powder and nutmeg, blend
Add mushrooms, cooled broccoli and chicken pieces. Place in microwave casserole with lid.

Set Microwave to cook in two stages:
Cook at high power 3 minutes
Cook at medium power for 15 minutes

While casserole is cooking toast season bread crumbs in a skillet and minced garlic .
Set aside. Before serving sprinkle seasoned toasted bread crumbs atop finished casserole.

Serve with steamed rice.
