1 pound chickpeas (garbanzo beans), cooked.
1/2 cup red onion, diced
4-5 cloves garlic, diced (or minced)
1 large green bell pepper, diced
1-1.5 cups parsley, chopped
1-2 lemons, squeezed (about 3 tbsp lemon juice, adjust to taste)
8 tbsp extra virgin olive oil
Makes about 8 1.5-cup servings.
