- 2 cups asparagus tips, diagonally cut
- 1/2 cup plain, non-fat yogurt
- 1 teaspoon curry powder
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 2 cups cooked skinless, boneless chicken breast, chopped
- 1/2 cup red bell pepper, seeded and chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons sliced almonds, toasted
- spinach leaves
Directions
1. Steam asparagus for 2 minutes or until crisp-tender.
2. In a medium bowl, whisk together the yogurt, curry, lemon juice and salt.
3. Add asparagus, chicken, bell pepper, cilantro and almonds and toss to coat.
4. Serve on fresh spinach leaves.
Serves 4.

It sounds very good but the nutritional facts dont add up. I went through the information you provided and recaculated as best I could and the sodium/cal/fat and cholesterol were all higher then reported. Its still wouldn't be a un-healthy recipe but its always best to know exactly what your eating. - 6/14/09

Looked great and tasted great! I used a yellow pepper instead of red, spring mix greens instead of spinach , and skipped the cilantro because those are the things I had at home. My husband thought the presentation and the taste was as good as any restraunt. I will definately make this again! - 3/27/08

I love recipes like this that are so adaptable to taste and what you have at hand. I skipped the asparagus, roasted a couple red bell peppers and threw them in, added cumin and cherry tomatoes, lime juice instead of lemon, a bit more cilantro and half Greek yogurt, half real mayo. Delicious, TY! - 3/4/11

This salad is terrific. I was given a bag of Lime, Cilantro dressing so I used it instead of the yogurt and cilantro, I didn't have any fresh red pepper but, used roasted red pepper in a jar. The salad was all eaten up at first serving.

This was really good! I ended up putting in a bit more lemon than recommended (the juice of one lemon) and it was quite good! My hubby was skeptical, until he tasted it. I love having a new way to serve spinach. Even my toddler ate everything! I also served plain couscous with this. Yummy!!!!! - 4/2/10
