Ingredients

1 boneless/skinless chicken breast cubed
2 T Olive oil
1 t Southwest seasoning
1 t Garlic powder
1 container of Trader Joe's Black Bean & Roasted Corn Salsa, drained
2 T Trader Joe's Corn & Chile salsa
8 oz's Garden Fresh Gourmet Salsa (any style you like)
1 can Organic Black Beans, rinsed
1 cup shredded Mexican style cheese
10 Flour Tortillas
Low fat sour cream optional
Directions
Cut up and season chicken, brown in olive oil.
Add the remaining ingredients and cook on medium
heat for 5-7 minutes
Add cheese
Heat tortillas and make roll ups
Or serve over tortilla chips
Garnish w/1 T, or less of sour cream
*The original recipe call for leftover chicken. I think it tastes better this way. I also make this with ground beef.
Serving Size: makes about 8 6 oz Roll up sandwiches
