Beef Enchiladas with Homemade Enchilada Sauce.

Introduction

I came up with this recipe because I didn't have any enchilada sauce ;) And now, I prefer this to store bought. I wasn't sure how many servings this made, because I brought it to our church pot luck, and we had some left overs. Number of Servings: 12

Ingredients

    Corn Tortillas, 12 tortilla, medium (approx 6" dia) (remove)
    *Beans, Kidney beans dark red 3 serv can, 3 serving
    Bush's, Black Beans, 1.5 cup
    *diced tomatoes & green chilies RoTel 10oz canned, 2.5 serving
    Tomato Sauce, 2 cans (15oz ea)
    *Lawry's Taco Seasoning, 6 tsp
    Garlic powder, 1 tbsp
    Great Value Mozzerella Cheese (shredded/part skim), 6 serving
    *Cheese, Chedder cheese, Mild (Kraft), 12 oz
    1 can black olives

Directions

Brown and drain hamburger. Season to taste. ( Garlic, salt and pepper, etc)

In large bowl mix 2 cans tomato sauce and 1 can rotel. Season with taco seasoning, garlic, red pepper flakes, salt and pepper. You could also add cumin, chili powder, etc. Whisk together. One at a time dip the corn tortillas into sauce and coat both sides, layer bottom of 10x13 pan. Put half the hamburger over tortillas. Combine kidney/black beans rinse well and drain. Add half the beans over the hamburger, top with mozzerella cheese. I didn't measure the cheeses either.. Sorry :( Repeat with layering ending with tortillas. Pour the rest of the sauce over the top, and both cheeses and top with chopped black olives. Pop it in the oven for 30 min @ 350 and ENJOY!!
