Renee's Creamy Dahl Soup

Introduction

This is a quick and easy recipe, especially if you keep precooked lentils around like I do... you can have it ready in 15 minutes! You can also eat this as dahl with some rice. This is a quick and easy recipe, especially if you keep precooked lentils around like I do... you can have it ready in 15 minutes! You can also eat this as dahl with some rice.
Number of Servings: 2

Ingredients

    1 package tofu
    4 cups cooked lentils
    2 cups carrots
    1/2 cup vegetable stock
    1 clove garlic
    2 T. curry
    1 T. tumeric
    1/2 T. cumin

Directions

Place carrots, garlic and stock in a saucepan over med-high heat. Let boil until carrots are just cooked.

In the mean time, blend tofu, lentils and spices in a blender (Note: leave the lentils out if you like a chunkier soup/dahl).

Stir the tofu mixture into the carrots; heat through. Serve warm.

Serving Size: 2 large bowls of soup or 6 servings of dahl
