Zucchini-Pecan Salad

Introduction

A great side dish for burgers or sandwiches or just an alternative to green salad. A great side dish for burgers or sandwiches or just an alternative to green salad.
Number of Servings: 4

Ingredients

    2 cups zucchini, chopped
    1 cup celery, chopped
    1 cup red bell pepper, chopped
    1/2 cup red onion, diced
    1 avocado, diced
    1 oz pecan pieces
    lemon juice
    extra virgin olive oil
    salt and pepper

Directions

Toss all ingredients through pecans together. Drizzle lemon juice and extra virgin olive oil, and add salt and pepper to taste. Serve chilled or at room temperature.
