Herby Potato Cakes

Ingredients

    4 medium potatoes
    1 tbsp margerine
    1 medium onion, finely chopped
    1 egg, beaten
    3-6 tbsp plain flour
    1 tsp mixed herbs
    Salt and pepper to taste

Directions

- Peel and cube the potatoes and boil until soft with a little salt.

- Drain the potatoes and return to the heat for a very short time, shuffling the pan often to slightly dry off the potatoes. Mash with the margerine, onion and herbs (and salt, pepper and garlic if you choose to add it) and leave to cool.

- When cool, shape the mash into 4 equal sized portions. Dip each cake into the egg and cover with flour. Fry the potato cakes (with a non/low calorie cooking spray) for around 5 minutes on each side, or until golden brown.

* This dish can be tweaked slightly by adding other ingredients. For example, salmon, cheese, tuna, peppers, sweetcorn, peas - pretty much anything! These items are not included on the calorie tracker so be sure to add them yourself if you choose to include them.

* This can also be made from leftover mash, and the recipe can be doubled and frozen in it's "prior to frying" state.
