Healthy Waldorf Salad

Introduction

Number of Servings: 7

Ingredients

    Chicken Breast, no skin, 9 ounces cooked
    Celery, raw, .5 cup, diced
    Grapes, 125 grams
    Apples, fresh, 171 grams
    Greek Yogurt, Plain, 4.5 oz
    Lemon juice, 1 tbsp
    *Diamond Crystal - Kosher Salt, 0.5 tsp
    Walnuts, .5 cup, chopped

Directions

Prepare boneless, skinless chicken breasts by cleaning and trimming, then baking them in a 350 degree oven for 30 minutes (or until internal temperature reaches 160 degrees).

Cut flesh of the apple from core, then finely chop (don't peel).
Chop celery into a fine dice.
Slice grapes.
Chop walnuts.
After chicken has cooked, chop in food processor.

Toss all ingredients together. Serve on double-fiber bread or on a romaine lettuce salad.

Serving Size: Makes 7 servings, 125g each
