Low Carb Coconut Macaroons (with optional almonds)

Introduction

Ingredients

    Mix together:

    2 cups dried, unsweetened coconut
    2 Tbsp water
    1 tsp vanilla
    12 kernels roasted almonds - chopped (non-salted) - OPTIONAL
    1/4 c. Truvia or your favorite low carb sweetener
    3 egg whites
    4 Tbsp melted butter


Directions

Let this mixture sit for 10 minutes so that the dried coconut soaks up the liquids. Form into 16 balls and place on parchment paper covered baking pan (a Silpat will also work). Bake at 325 degrees for about 15 to 20 minutes or until just turning golden. Cool on a baking rack.

Serving Size: Makes 16 medium sized cookies. Fiber count on these should be at least 3 or 4g per cookie. Also, the Truvia is calculating with carbs but these should also not need to be added to the carb count. Total effective carb count per cookie is, I believe, only 3.
