Lemony Turkey Kebabs with pita bread and salad

Ingredients

    1 kg turkey mince [2.2 pounds of ground turkey]
    handful of lemon thyme leaves chopped
    handful of parsley, chopped
    2 garlic cloves, peeled and crushed
    2 shallots, peeled and finely diced [can use onion instead]
    1 small red onion for salad [could use 1/2 for kebabs instead of shallots]
    1 red bell pepper, deseaded 1/2 of it finely chopped for kebabs/ the other half sliced for salad
    1/2 red chili, deseeded and finely diced
    med head of lettuce
    1 egg
    1 lemon - zest to be used in kebab, juice can be used over salad
    ground black pepper
    1/2 cup yogurt

Directions

1. light barbecue, preheat the grill to highest setting, or use forman type grill

2. in a large bown bind together minced/ground turkey, chopped herbs, crushed garlic, and diced shallots/red onion, 1/2 red bell pepper, and red chilli, with egg and lemon zest. Season with black pepper

3. Once thoroughly mixed together, take a small handful and shape around a metal or wooden skewer, compacting the mixture well and making a long 'shish' or sausage shape. Alternatively you could make the mixture into patties - which works well for forman grill.

4. If using barbecue or griddle pan, put each kebab straight onto it after it is made. don't turn them too soon or they will fall apart. Ensure the meat is cooked all the way through before serving.

5. mix lettuce, sliced tomato, sliced red onion and squirt with lemon juice

6, Spread toasted pitas with yogurt, and put in patties/kebabs, and salad

Serving Size: makes 6-8 kebabs to serve 4 people
