Introduction

A delicious, diabetes-friendly alternative to Cherry Cheesecake. I am not diabetic, but I LOVE this dessert! A delicious, diabetes-friendly alternative to Cherry Cheesecake. I am not diabetic, but I LOVE this dessert!
Number of Servings: 16

Ingredients

    1 angel food cake (10 inches)
    1 small pkg sugar-free instant vanilla pudding mix
    1 ½ c milk (2% low-fat)
    1 c light sour cream
    1 (21 oz) can light cherry pie filling

Directions

1. Tear the Angel Food cake into bite size pieces. Press into 13x9 cake pan.
2. In a mixing bowl, combine the pudding mix, milk and sour cream. Beat until thickened, about 2 minutes.
3. Spread over the cake.
4. Spoon the cherry pie filling evenly over the top of the cake.
5. Chill thoroughly until serving time.

Makes 16 servings.

  • I love this recipe. My great aunt had given it to me a few years ago. We added whipped dream whip to it as well. She called it Cherries in the Snow. It is really good and diet friendly! - 12/5/07
