Apple Cinnamon Upside Down Cake

Introduction

Ingredients

    Cake:
    1 1/2 Cups Whole Wheat Flour
    2/3 Cup Splenda Granular
    1/2tsp Baking Powder
    4 Tblsp Light Margarine
    1 1/4 tsp Cinnamon
    2/3 Cup Skim Milk
    50 ml Egg Substitute (or one large egg)
    3/4 tsp Baking Soda
    1 1/2 Tblsp Brown Sugar

    Topping:
    2 Tblsp Light Margarine
    2 Tblsp Brown Sugar
    1/4 Cup Splenda Granular
    3 Medium Apples (peeled & sliced)

    For bottom of pan:
    1 Tblsp Diet Coke

Directions

Preheat oven to 350 degrees

Topping:
Melt butter and pour into bottom of baking pan, add Brown sugar, apples (I always use extra apples) and cinnamon and toss lightly. Drizzle the diet coke over the topping, set aside

Batter:

In large bowl, combine flour, splenda & baking powder, then cut margarine in until the mixture resembles small crumbs. You do need to cut it in (like pie crust) If you use a food processor or mixer it will make it a more like a heavy dough than a cake batter and it will not tzste right.

In seperate bowl or measuring cup, whisk together the milk, egg substitute and baking soda. Pour liquid ingredeints over dry ingredients, add the cinnimoan and stir with large spoon just until blended. It should be slightly lumpy and somewhat thick.

Spoon the batter over the apple mixture and smooth it out - it does not have to be perfect. Bake for 20-25 minutes or until center of the cake springs back when lightly touched. Cool for 5-10 minutes and then turn entire cake upside down onto plate or cutting board. Cut into 8 pieces and serve with fat free cool whip.

For this recipe you can substitue any coffeecake or quick bread over the apple mixture.
