Vicki´s Vegie Chili

Introduction

Loaded with colorful vegies and beans. Low sodium. Loaded with colorful vegies and beans. Low sodium.
Number of Servings: 6

Ingredients

    1 chopped large onion
    1/2 c chopped green pepper
    1/2 c chopped sweet red pepper
    1 tsp garlic
    2 T olive oil
    2 grated or chopped carrots
    2 c corn
    2 chopped large tomatoes w/skin
    4 c cooked black beans
    1/2 c low sodium tomato paste
    2 c water
    1 T chili powder

Directions

Saute onion and peppers in olive oil. Add all remaining ingredients and simmer for 20 minutes.

Let rest for one hour, then serve warm. Divide into 6 portions.

Note: if using any canned vegetables and beans, rinse and drain well to avoid increased sodium content. Can be made with any combination of cooked beans.
