Slow-Roasted Cherry Tomato Bruschetta

Introduction

This recipe is from Guideposts magazine.You could addd a little mozzarella on top, putting it under the broiler for a few seconds to melt the cheese, but it's delicious on it's own, too! I used Panera Bread French Baguette for the nutritional info, and included instructions to make bruschetta from a fresh loaf of bread. Ingredients

    3 pints cherry tomatoes, halved
    2 Tblsp. olive oil
    3 garlic cloves, minced
    1/2 tsp. salt
    1/2 tsp. pepper
    1/4 c. fresh basil leaves, sliced
    1 Tblsp. red wine vinegar
    24 slices basic bruschetta (baguette-like bread)

    Anchovy fillets, Kalamata olives or sliced fresh basil leaves, for garnish (not included in nutritional info)

Directions

Preheat oven to 325 degrees. Toss the tomatoes in a bowl with the olive oil, garlic, salt and pepper. Place the dressed tomatoes on a baking sheet and roast for 45 minutes.

Combine roasted tomatoes with basil and vinegar. Top bruschetta slices with roasted tomato mixture. Garnish with anchovy fillets, olives or fresh basil (not included in nutritional info).

If making bruschetta from a fresh loaf of French or Italian bread:
Place oven rack on top level; preheat oven to 450 degrees. Slice bread on a diagonal for maximum surface area, about 1/2-inch thick. Brush slices on one side with a mixture of olive oil and finely minced garlic. Place slices oil-side up on a baking sheet. Bake for about 3 minutes until lightly browned, watching closely to prevent burning. Remove from oven and add topping.

Serving Size: Makes 12 servings of 2 pieces each.
