1/4 cup vegetable oil
1/2 cup applesauce
1 cup sugar
1 1/2cup sifted flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 tablespoon cinnamon
1/2 teaspoon salt
1 cup grated/shredded raw carrots (about 3 medium)
1/2 cup pecans
Pour into a greased and floured (cooking spray can be used) 9x5x3 inch loaf pan. Bake in a 350 degree oven for 50-60 minutes.
Remove from oven and let cool for 5 minutes before removing from pan. Remove from pan and allow to cool on wire rack. Makes 15-20 slices.
